It’s a healthy substitute for regular rice. Cauliflower is a very versatile vegetable that you can use it in different ways.
How to make it?
It’s very simple and easy. Take a whole cauliflower.
There are two techniques for making cauliflower rice. You can either use a box grater with the medium-size holes traditionally used for cheese, or a food processor with the grater blade to blitz it into small pieces. With both techniques you’re aiming for little pieces of rice.
One additional step I like is to press any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your dish soggy.
You can also just boil the cauliflower florets into hot water for 4-5 minutes till it gets 50 % cooked.
Then remove the water and put it on kitchen towel to remove the excess water and then churn in the food processor.
When your rice is ready then you can stir fry it with whatever veggies you like.
I have taken carrot, green peas and French beans.
I have also used little garam masala and Italian herbs to give that fusion food feel.
One big cauliflower in to rice
2 spoons olive oil
1 big onion chopped
1 big carrot chopped or you can grate it
200 gm frozen or fresh peas
Bunch of French beans chopped into small pieces
Garam masala small spoon
Italian herbs small spoon
You can add biryani masala powder if you don’t want Italian herbs
Salt as per taste
Heat the oil in the pan on low flame.
Add chopped onion and sauté it till it changes colour.
Now add all the veggies, masala and seasoning and stir fry it on low flame and let them get cooked. Later add the cauliflower rice and mix it well.
You can cover the pan for 2-3 minutes and let it all cook well with all the flavours.
And your cauliflower rice is ready to serve hot.
You may even add eggs in it to make it more healthy
You may add veggies of your choice and make it more interesting and tasty.
